I got this from a Smokin Site I go to. I tried it tonight at a Christmas party and it seemed to be a hit.
6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeño Peppers, diced (seeding is optional)
1 - 55 ounce can Bush’s Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard
Saute the bacon, onion, pepper, and jalapeno in a dutch oven. When the peppers are soft, add in the rest of the ingredents. Mix it together, and bake 350 for an hour or more.
I doubled the recipe and next time I think I'll add some liquid.
