My Grandmother would make this for me all the time as I was growing up. She never used the horseradish. She served them to us on top of home made mashed potatos. A dollop of sour cream on top is great!!! We called it a Strawberry Sundae. Kahuna
Polish Beets (Buraczki po Polsku)
1 small onion, finely chopped
1 tablespoon butter
1 tablespoon flour
1/2 cup sour cream or yogurt
5 medium cooked beets, peeled and shredded
(we use as grandma did canned beets)
3 tablespoons horseradish, to taste
12 teaspoons sugar
salt
pepper, freshly ground
2 tablespoons parsley, chopped
Saute the onion in the butter for three to five minutes. Stir in the flour. Add the sour cream or yogurt and
heat to just below the boiling point. Add the beets, horseradish and sugar, and heat
thoroughly. Season with salt and pepper to taste and sprinkle with the parsley.
