I found this on YouTube and it sounded like a good recipe for cookies.


If you do not want to watch the video here is everything in print.

3-INGREDIENT BANANA OATMEAL BREAKFAST COOKIES

1.5 cups oatmeal (I used 1/2 cup rolled and 1 cup quick)
2 medium bananas 1/3 cup mini chocolate chips

DIRECTIONS Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with a silpat mat or coat with some cooking spray.
Using the back of a fork, mash bananas in a medium bowl until they are broken down.
( She said that the darker the Bananas the sweeter and chewier the cookie will be )

Add in oats and gently stir until all of the oats and bananas are mixed together and look like a thick cookie batter.

Now your ready to add the chocolate chips! Sprinkle them into the dough and stir until they are just mixed throughout.( She also advises you can substitute what ever you like for the chocolate chips. She also said you can add other ingredients like Cinnamon , Clove , Vanilla or anything that you like. )

Scoop one heaping tablespoon of the dough into your hands and free form into a cookie. Place on cookie sheet and continue until you have 12 cookies. Cook for 12-15 minutes or until set through and lightly golden.
Cool and enjoy!

NOTE: these cookies will not spread in the oven so be sure to form them into a cookie before placing on baking sheet.

Makes 16 cookies Nutrients per cookie: Calories: 67; Total Fat: 2.1g; Saturated Fat: 1g; Cholesterol: 0mg; Carbohydrate: 11.8g; Dietary Fiber: 1.3g; Sugars: 5g; Protein: 1.3g

I made a batch today.

I followed the recipe as far as the amount of bananas and oatmeal. ( No chocolate chips )
Then I deviated ..................................
1...I added a couple shakes of Cinnamon because I like Cinnamon.
2...Some cooking Vanilla , a couple of drops.
3...Two packs of the Sun-Made Raisins ( the single serving 1 ounce packs ).
4...Just for the hell of it I also added one teaspoon of honey.

The cookies turned out pretty good but I think they would of been better if I would of added some salt to the mix like you do for oatmeal and raisin cookies. They are really easy to make and I don't think these will last to long around here.
When I make the Old Fashion Oatmeal for breakfast I add a small dash of salt and it does help the flavor.

Keep experimenting, Chuck. Several hundred versions downstream, you'll have it figured out. It's a good, simple recipe of good ingredients, that begs to be modified, and eaten.

Somewhat like Bob, I eat chocolate only to be polite. You'll all be glad to hear that yesterday afternoon, I was VERY polite.

Simple! What's a spice/herb that YOU like, that she doesn't? Fennel? Carroway? Curry? Oregano? Ginger?

Spices .... Anything in the heat or hot category she avoids.
Some I like to add to my meals ....Cayenne powder, Sriacha HOT chili sauce , Louisiana Hot Sauce or Tabasco sauce. Then there is the Gator Hammock , Swamp Gator made here in Felda , fl.
It has an assortment in it .... Aged Cayenne Peppers , vinegar , fresh Habanero and Jalapeno peppers , Garlic , salt and other spices. I have more for special occasions.

As far as food that she likes ( Except for Okra & Grits ) almost everything else that I like.

No sweat, Bob. I figure that okra snot would weld stainless steel to styrofoam. Oughta do well with plain, old oatmeal. Even cobblestones!
Mixing catfish with it would be good, too. No sense ruining TWO batches of cookies.

Ya HAD to mention okra - didn't ya. Now Bob will launch on a recipe for cookies using crushed okra, mixed with either catfish or turtle.

Ya just HAD to mention okra. . . . . sigh

Bob will have to include Okra in the recipe since we ( Down South ) already have Fish Cakes or Cookies depending on who is cooking them. Better yet have both Okra and Grits included in the Catfish cookies so they are a complete meal in a single item. :)
Turtle ( Gator also ) is always served as nuggets lightly corn meal coated and deep fat fried. Especially in the classier places like wooden tables under a Oak Tree by the rivers edge. The better ones in the Summer time will usually have a Air Boat ( idling ) about 30 feet away with the back end aimed towards the table furnishing a breeze for the dinners.

We will need to modify the Redneck Sushi recipe to include okra. While we are at it we need to come up with a substitute for that nasty seaweed wrapping for the sushi. The foul taste of seaweed almost ruined an incredible culinary experience.

Add some pickled balogna! Bologna, hot dogs, and viennie snausages are cmposed of junk meat-byproduct when they are "made" the first time. If it lingers in the store past the product expiration date, it gets sent back, and repackaged for another try.

What's on the wish list of ingredients for Redneck Sushi? I had some Mexican sushi in Baja. Very good! Different spices than in Japanese sushi, and every bit as good. Just different. I could be interested in some Cajun Sushi.

Viennie sausages are made from only the finest cuts of meat so a person can enjoy them with on a Ritz cracker with a splash of Hot Sauce. Lots of folks think of them as short Hot Dogs.

Sushi ??? Isn't that nothing more then a ten dollar word for fish bait.
