Bears, I was considering a Mouseboat as well. It just looks like the sides aren't very tall at all. How is it in the water as far as water getting in?

I put a full deck on mine with a 46" long by 21" wide cockpit opening and a coaming about 1 3/4" tall. The only water that came in was the dripping off the paddle. I did not put a skeg on it yet-- it really needs one.

Yep. I haven't built any other boats before. I'm just looking for something small to take out fishing on a local pond.

And if you're going to the skiff route, you'll probably want to get a little bit of tumble home so it's not such a knuckle-buster to paddle or hard to reach the water. But that will make it more difficult to build.
