Over on Matt's web site we were talking about fish......... This led to something........
The King of the Sun Fish we chase down here in Florida is the Big Mouth Bass. When we get one or a couple they are usually fried.
The King of the Fresh water fish.
There are old fashion ways to cook him, Fried is the normal way of doing it today.
Now do it the old fashion way.
Fillet him out and poach him in some fresh (hand squeezed , not the bottled crap ) Orange or Grapefruit juice.
This can be done in the oven at home or when out camping in a frying pad. If you want to then add some onion slices and /or garlic since these spices are available to us on a daily basis today, unlike in the old days.
He can also be smoked if you want some good eating later while paddling.
A little salt an pepper and lots of smoke..........is the old fashion way of having a good paddling snack or meal later down the river in the old days.
William Bartram did just that when he was paddling / camping an mapping Florida in the 1700's. Some of us are doing it today ..... Not the mapping an exploring , since we know where we are .. I was referring to some fishing and good eats.
