Quick Rice Pudding
1 (3 5/8-oz) pkg vanilla pudding (not instant)
2 Tbsp. plus 1/2 tsp of pudding mix
1/2 cup plus 1 Tbsp. of skim or evaporated milk
2 Tbsp. quick cooking rice
In a 1 cup (can be 8-12-oz) mug, combine ingredients and stir. Microwave on Med. for 2 minutes and stir. Microwave on Med. for 1- 1 1/2 more minutes or until pudding comes to a full, bubbling boil. Stir again. Let sit 5 minutes, so rice finishes cooking. Enjoy! You can add 1/2 cut up banana.

Quick Tapioca Pudding
1/2 cup skim evaporated milk
1 tspn. quick cooking tapioca
dash of salt
1 tspn. sugar or sugar substitute
1 egg yolk
1/4 tspn. Vanilla
Mix all ingredients together except vanilla in a 1 cup mug. Let stand for 5 minutes. Stir Microwave on Med-High for 1 1/4-1 1/2 minutes or until starts to boil. Remove from oven and add 1/4 tspn. vanilla. Stir. You can serve hot or cold.

Bread Pudding
1 slice whole wheat bread
a few raisins
1/2 to 3/4 cup skim milk
1 egg or egg substitute-beaten
1 Tbsp. brown sugar
1/4 tspn. Vanilla
1/8 tspn. Salt
1/4 tspn. Cinnamon
Spray inside of the cup with cooking spray. Put egg in cup and beat, add milk. Cut up bread and place in cup. Add raisins, brown sugar, cinnamon and vanilla. Cook for 1 1/2 minutes. Stir, let stand a couple minutes and enjoy!

Custard Pudding
1/2 to 3/4 cup skim milk
1-2 tspn. Sugar
1 egg, beaten
1/8 tspn. Salt
1/4 tspn vanilla
Spray inside of the cup. Mix together milk, egg, sugar and salt until well blended. Microwave for 1 1/2 minutes. Stir in vanilla. Chill until ready to serve.
