Kayak Jack sent this to me and I posted it on here for safe keeping, after the New Year ( We always have some Hopping John ) I am going to make this , it sure sounds good.
Would be a easy and filling soup to make out camping for several guy's. As I told Jack , some cornbread to go with it ....:D

I might have to add an onion to it , just out of habit and because I like onions.

Crock Pot Taco Soup.

1 (16 oz) can of pinto beans
1 (16 oz) can of navy or kidney beans
1 (11 oz) can niblet corn
1 (11 oz) can Rotel tomatoes & chillies
1 (28 oz) can diced tomatoes
1 (4 oz) can diced green chillies
1 (1 1/4 oz) envelope taco seasoning mix
1 (1 oz) envelope Hidden Valley ranch dressing mix
1 lb shredded chicken, ground beef, or any meat

Cook meat and drain. Shred if needed. Add all ingredients to crock pot - DO NOT DRAIN CANS. Stir. Cook on HIGH for 2 hours or LOW for 4 hours. Keep on low until serving to keep hot. Garnish w/ sour cream, shredded cheese,chopped green onions, or tortilla chips.

Everything , except for the meat has ( basically ) been cooked , they cook or steam to sterilize the stuff in the cans before we get them. For all practical purposes the canned goods are already cooked.

So it looks like reheating them is the major thing along with cooking the meat. Now the longer it cooks the better ( lets the flavors mingle and get acquainted with each other) a Dutch oven or a large cast iron skillet would do the job when out camping.

There is 84 ounces of canned goods in this ( without the meat or anything extra) so make it a large pot.

One way to have it ready quicker , cook the meat and sautéed the onion with the meat to speed up the cooking process for the onion , if you are so inclined as to have a onion or garlic in there. :roll:

Then add the rest and get it hot. :D The crew I camp with .. I would have to make a double batch and then add some more extras to it like celery , onion , bell pepper , garlic and some wine as an additional liquid.

After all we are in the south and everything has to have the Holy Trinity of southern cooking , onion , celery , bell pepper , with there cousins ..... garlic and some wine added or it is not right.
